The ingredients needed to make Lasagne:
  1. Get 500 gm lean beef mince
  2. Take 1 clove garlic
  3. Take 1 Onion diced
  4. Take 1 medium Carrot sliced
  5. Make ready 3 stalks Celery sliced
  6. Make ready 2 Tbsn Tomato Paste
  7. Make ready 1 tin diced or crushed tomatoes approx 400gm
  8. Take 1/2 cup red wine (optional)
  9. Get 1 chicken stock cube
  10. Make ready Italian Herbs, basil, parsley, oregano, dried or fresh
  11. Get 250 gm Lasagne Sheets Dried or Fresh
  12. Take Bechamel Sauce
  13. Prepare 60 gm butter
  14. Get 1/3 cup plain flour
  15. Prepare 2 cups milk
  16. Prepare 1/2 cup cheddar cheese grated
  17. Get 2 cups mozzarella cheese grated
  18. Prepare Nutmeg fresh or dried
  19. Prepare Baking dish approx 30.5 x 24.5 x 4.5 cm

Tear off a sheet of tin foil large enough to cover the baking dish without touching the cheese, and grease the underside. Cover the lasagne with the foil, crimping the edges under the rim to seal. Remove the foil and return to the oven. Layer up the lasagne in a baking dish, starting with a third each of the ragu, then the pasta, then the white sauce.

Steps to make Lasagne:
  1. Brown mince, garlic, onion in a medium to large frying pan.
  2. Add carrot and celery and stir-fry for approx 5 mins.
  3. Combine Red wine, tomato paste and chicken stock cube together in a bowl then add to the frypan.
  4. Add tin of tomatoes, herbs, stir well, cover and allow to simmer for approx 30 mins. Add 1/2 cup of water if the mixture is not liquid enough.
  5. To Make Bechamel Sauce:
  6. Melt butter in a saucepan on medium to low.
  7. Add flour and stir constantly until you have a smooth paste (a roux).
  8. Remove from the heat and add a little bit of milk at a time whilst stirring to ensure you remove any lumps. Return to the heat and continue stirring until the sauce thickens.
  9. Add nutmeg, stir through, add cheddar cheese, stirring until melted. Remove from heat.
  10. Pre-heat Oven to 180 degrees.
  11. To Construct Your Lasagne:
  12. Take a ladle of meat sauce and spread over the base of the baking dish.
  13. Add a layer of Lasagne sheets then spread some more meat sauce, then a sprinkle of mozzarella cheese, then thin layer of Bechamel sauce. Repeat this layering until all ingredients are used.
  14. Bake in oven for approximately 40 mins or until golden brown.

Remove the foil and return to the oven. Layer up the lasagne in a baking dish, starting with a third each of the ragu, then the pasta, then the white sauce. Once the dish has cooled completely, transfer it to an airtight, freezer-safe. The ultimate homemade lasagne, made with beef and pork mince, fresh pasta, Italian mozzarella and creamy béchamel. Gently heat the oil in a large frying pan with a lid.
