- Add red chili sauce, potatoes, ground oregano, garlic powder, and stew meat to pot. Cover and simmer on low for 1 1/2 hours.
Reduce heat to simmer and begin peeling and cutting potatoes into cubes. Remove from heat and transfer onions and garlic to a bowl with a slotted spoon. In a large bowl, stir together flour, salt, cumin, and pepper. Wash chilies, removing stems and seeds. Put pork fat into deep skillet until there is enough on the bottom of the skillet to prevent meat from sticking.
