  1. Prepare 2 lb ground beef
  2. Make ready 1-2 lb chuck roast (cubed) or stew meat

  4. Make ready 15.25 oz can kidney beans
  5. Take 15.25 oz can white beans
  6. Prepare 15.25 oz can black beans
  7. Make ready 3 large bell peppers (diced) assorted colors (optional)
  8. Prepare 1 large onion (diced)
  9. Make ready 8 cloves garlic (crushed and roughly chopped) or 6 T. minced
  10. Get 1/4 cup worcestershire sauce
  11. Make ready 4 T. chili powder
  12. Take 2 T. paprika
  13. Make ready 2 T. oregano
  14. Get 1 T. ground black pepper
  15. Make ready Salt (to taste)
  16. Take 1 lg. bottle V8 juice
  17. Get 1 T. liquid smoke (optional)
  18. Make ready 2 T. cocoa powder or 1/4 cup dark chocolate (optional)
  19. Make ready Juice of one lime (optional)

This is ballparked, and I taste as I go.) I don't care what Texas says about chili (and a few other things)—I use both beans and meat. Also, I make it differently every time, so just use this "recipe" as a template, and taste as you go.

Steps to make Ted's Chili:
  1. Brown the ground beef in a skillet, drain grease and add to crockpot or large stew pot.
  2. Sear the cubed meat until browned on the outside and add to the pot. NOTE: does not have to be cooked through
  3. Strain and rinse the beans and add to pot. Also add the canned tomatoes plus the juice.
  4. Add diced onions and half of the diced peppers to the pot. Then add the rest of the ingredients. Wait until an hour before serving to add the rest of the peppers. NOTE: waiting to add peppers helps to keep their texture…this is optional
  5. Top off your crockpot with V8 juice or add about half of the bottle if using an oversized stew pot. Simmer the mixture on low for a few hours. The chili should naturally thicken and the stew meat will become tender.
  6. NOTE: For spicier chili, feel free to add a small can of chipotle peppers or diced jalapeños. Other optional ingredients I like to occasionally add include sweet corn, poblano peppers, diced carrots, etc.

This is ballparked, and I taste as I go.) I don't care what Texas says about chili (and a few other things)—I use both beans and meat. I was back in Albany last summer and got to have Ted's again while there, and now I have a serious craving for it. Add the meat and stir every minute or so, making sure to break up any large pieces that may form. When the meat is halfway cooked (about medium), add in the onions and garlic to the meat and continue cooking until tender and transparent.
